The Drouant galette
To celebrate Epiphany, Nicolas Jaulmes, our head pastry chef, reinterprets the traditional galette des rois into an exceptional creation, at the crossroads of art and gourmandise.\nUnder the guise of a book, the galette is revealed as a bold, poetic trompe-l'oeil.\Inspired by the elegant motifs of the Ruhlmann staircase, its decoration extends the Art Deco aesthetic emblematic of the place, while the puff pastry, meticulously worked to the point of illusion, reveals a delicate and perfectly mastered frangipane, a subtle composition where the lightness of the crunch contrasts with the melting sweetness of the almond.\nThis creation fully reflects the spirit of Drouant, where gastronomy and literature have been in dialogue for over a century.
